Having a healthy diet while you’re on the road can be challenging. But preparing your own food while in your truck can seem daunting!
That’s why we love slow cooker dump meals—meals that you can prep at home ahead of time and then dump into your slow cooker when you’re on the road. Here are some of our favorite meals to try this winter season.
1. Potato Soup
What You’ll Need:
- 1 (30 oz) bag of frozen hash-brown potatoes
- 2 (14 oz) cans of chicken broth
- 1 (10.75 oz) can of cream of chicken soup
- ½ cup of onion, chopped
- 1 (8 oz) package of cream cheese, softened
- Black pepper to taste
- Whatever garnishes you love, such as green onion, cheddar cheese, and bacon
Looking to add an extra vegetable to your soup? Add some steamed broccoli. You can also add diced celery or carrots for extra flavor and nutrients.
2. Steak & Gravy
What You’ll Need:
- 2-3 pounds of top sirloin steak or London broil sliced thin
- 2 packets of brown gravy mix
- 1 packet of Au Jus mix
- 2½ cups of water
Serve over rice, pasta, or mashed potatoes.
Quick Tip: Cut up your steak while you’re still at home so you don’t have to worry about making a mess when you’re on the road.
3. Roasted Root Vegetables
What You’ll Need:
- 6 medium carrots, cut into 1-inch pieces
- 4 medium parsnips, peeled, cut into 1-inch pieces
- 2 medium red onions, cut into thin wedges
- 2 medium sweet potatoes (about 1 lb.), peeled, cut into 1-inch pieces
- 3 tablespoons of honey
- 1 tablespoon of olive oil
- 5 teaspoons of thyme, basil, or another of your favorite spices
- 1 teaspoon of salt
- ½ teaspoon of pepper
- 1 tablespoon of balsamic vinegar
4. Garlic Parmesan Chicken Stew
What You’ll Need:
- 1 pound of little potatoes, quartered
- 3 boneless, skinless chicken breasts cut into 1-inch pieces
- 1 rib of celery, chopped
- ½ medium onion, finely chopped
- 3 large carrots, thinly sliced
- 1 teaspoon of minced garlic
- 1 teaspoon of salt
- 1 teaspoon of dried parsley
- 1 teaspoon of dried thyme
- ¼ teaspoon of black pepper
- 2 cups of chicken or vegetable broth
- ⅔ cup of heavy cream
- 2 tablespoons of cornstarch
- ½ cup of shredded Parmesan cheese
